Preparation of Main Ingredients

1

Prepare the Hamachi

Slice the hamachi into thin, bite-sized pieces. Arrange them artfully on a plate.

2

Roast the Butternut Squash

Peel and dice the butternut squash into small cubes. Toss with a pinch of salt and pepper, then roast in a preheated oven at 200°C (400°F) for about 20 minutes, or until tender. Allow to cool slightly.

3

Prepare the Serrano and Orange

Finely slice the serrano pepper, removing seeds if you prefer less heat. Segment the orange, removing any seeds, and cut into small pieces.

Dressing and Assembly

4

Make the Dressing

In a small bowl, combine the soy sauce, sesame oil, rice vinegar, salt, and black pepper. Whisk together until well blended.

5

Assemble the Tataki

On the plate with the hamachi, scatter the roasted butternut squash, orange segments, and sliced serrano pepper. Drizzle the dressing over the entire dish.

6

Add Masago Arare

Sprinkle the masago over the top for added texture and flavor.
