Method
Prepare the Brioche

Make the Custard Mixture
In a large bowl, whisk together the eggs, milk, pumpkin purée, cinnamon, nutmeg, vanilla extract, brown sugar, and a pinch of salt until well combined.

Soak the Brioche
Submerge each slice of Manresa brioche in the custard mixture, allowing it to soak for about 2 minutes on each side, or until well absorbed.
Cook the French Toast

Heat the Pan
Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.

Cook the Toast
Place the soaked brioche slices on the skillet and cook for about 3-4 minutes on each side, or until golden brown and slightly crispy.

Brûlée the French Toast
Once cooked, sprinkle a little extra brown sugar on top of each slice and use a kitchen torch to brûlée the sugar until caramelized and crispy.
Prepare the Pumpkin Whip

Whip the Cream
In a mixing bowl, combine heavy cream, powdered sugar, and pumpkin pie spice. Using an electric mixer, whip until soft peaks form.
Serve

Plate the French Toast
Place the brûléed pumpkin French toast on a serving plate.

Top each slice with a generous dollop of pumpkin whip.
