Steak Tartare Preparation

Prepare the Beef
Finely chop the beef tenderloin using a sharp knife. Aim for a very small dice for a smooth texture.

Mix Ingredients
In a bowl, combine the chopped beef, finely diced shallot, salt, and black pepper. Mix well to combine.

Assemble the Dish
Spoon the tartare mixture onto a chilled plate. Create a small well in the center and carefully place the egg yolk on top.

Serve with Crackers
Arrange the saltines around the tartare for dipping.

Cook the Gastrique
In a small saucepan, combine blueberries, balsamic vinegar, and sugar over medium heat. Bring to a simmer.

Reduce the Mixture
Allow the mixture to simmer for about 15 minutes, stirring occasionally, until it thickens slightly.

Strain the Gastrique
Remove from heat and strain the gastrique through a fine-mesh sieve to remove the solids. Let it cool.

Drizzle the blueberry balsamic gastrique over the steak tartare before serving.
