Method

Preparing the Steak

    Season the Steak

    Rub the CAB ribeye steak with salt and black pepper on both sides.

    Sear the Steak

    In a skillet, heat olive oil over medium-high heat. Once hot, add the seasoned steak and sear for 4-5 minutes on each side for medium-rare. Adjust time for desired doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5-10 minutes before slicing.

Making the Brown Sugar Demi

    Simmer the Ingredients

    In the same skillet used for the steak, add minced garlic and sauté for 1 minute until fragrant. Add beef stock, brown sugar, soy sauce, and thyme. Bring to a simmer.

    Reduce the Sauce

    Allow the mixture to reduce by half, stirring occasionally, for about 10-15 minutes.

    Finish the Sauce

    Once reduced, stir in the unsalted butter until melted and the sauce is glossy. Season with salt and pepper to taste.

Preparing Shoestring Potatoes

    Cut the Potatoes

    Peel the russet potatoes and cut them into thin shoestring slices.

    Fry the Potatoes

    In a deep pot, heat vegetable oil to 350°F (175°C). Carefully add the sliced potatoes in batches and fry until golden and crispy, about 3-4 minutes.

    Drain and Season

    Remove the fried potatoes and drain on paper towels. Immediately season with salt to taste.
