Fritter Preparation

    Prepare the Peas

    If using fresh peas, shell them. If using frozen peas, thaw them in a bowl of warm water. Drain and set aside.

    Make the Batter

    In a large bowl, combine the peas, all-purpose flour, baking powder, salt, black pepper, and lemon zest. Mix well.

    Add Eggs and Herbs

    Crack the eggs into the bowl with the pea mixture. Add the chopped parsley. Stir until all ingredients are well combined and form a thick batter.

    Heat the Oil

    In a large skillet, heat about 1/2 inch of vegetable oil over medium heat until hot.

    Fry the Fritters

    Drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.

Pistachio Harissa Sauce Preparation

    Blend the Sauce Ingredients

    In a food processor, combine the shelled pistachios, harissa paste, olive oil, lemon juice, minced garlic, and salt. Blend until smooth and creamy. Adjust seasoning to taste.

    Serve the warm pea fritters topped with a generous drizzle of pistachio harissa sauce.
