Roasting the Squash

    Prepare the Squash

    Preheat your oven to 400°F (200°C). Cut the honey patch squash in half, scoop out the seeds, and slice it into wedges or cubes.

    Season the Squash

    In a large mixing bowl, toss the squash pieces with olive oil, salt, and black pepper until evenly coated.

    Roast the Squash

    Spread the seasoned squash pieces in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until the squash is tender and caramelized, flipping halfway through cooking for even browning.

Preparing the Toppings

    Toast the Pepitas

    In a dry skillet over medium heat, add the pepitas and toast them for about 3-5 minutes, stirring frequently, until they are golden and fragrant. Remove from heat and set aside.

    Once the squash is roasted, remove it from the oven and let it cool slightly. Serve the roasted squash on a platter, topped with a generous scoop of coconut yogurt, a sprinkle of toasted pepitas, and a dash of habanero-sumac powder to taste.
