Burrata and Grilled Levain

Smoked Bacon-Jalapeno Jam

Pickled Huckleberries

Method

Prepare the Pickled Huckleberries

    Make the Pickling Liquid

    In a saucepan, combine white vinegar, sugar, and salt. Heat over medium heat until sugar and salt dissolve.

    Pickle the Huckleberries

    Add the huckleberries to the saucepan and simmer for about 5 minutes. Remove from heat and let cool.

    Refrigerate

    Transfer the huckleberries and pickling liquid to a jar and refrigerate for at least 1 hour before serving.

Prepare Smoked Bacon-Jalapeno Jam

    Cook the Bacon

    Cook the bacon in a skillet over medium heat until crispy. Remove bacon and drain on paper towels.

    Sauté Jalapenos

    In the same skillet, add minced garlic and chopped jalapeno. Sauté until fragrant, about 2 minutes.

    Make the Jam

    Add the cooked bacon back to the skillet along with brown sugar, apple cider vinegar, and salt. Cook for another 5 minutes, stirring frequently.

    Cool the Jam

    Remove from heat and let the jam cool slightly before serving.

Prepare the Burrata and Grilled Levain

    Preheat Grill

    Preheat a grill or grill pan over medium-high heat.

    Grill the Bread

    Brush levain slices with olive oil and season with salt and pepper. Grill for about 2-3 minutes on each side until golden brown.

    Plate the Burrata

    Remove the grilled bread from the grill and place the burrata cheese on a serving plate.

    Serve

    Serve the burrata with the smoked bacon-jalapeno jam and pickled huckleberries on the side, along with grilled levain for dipping.
