Pork Chop Preparation

Season the Pork Chops
Sprinkle the salt and black pepper evenly over both sides of the Berkshire pork chops. Let them sit at room temperature for about 15 minutes to absorb the flavors.

Sear the Pork Chops
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side until they are browned and cooked to an internal temperature of 145°F (63°C). Remove from the skillet and let rest.
Red Curry Sauce Preparation

Prepare the Sauce
In the same skillet used for the pork, add the red curry paste and cook for 1-2 minutes until fragrant. Pour in the coconut milk and stir to combine, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.

Finish the Sauce
Add the honey and lime juice to the simmering sauce. Stir well to combine and allow it to simmer for an additional 3-4 minutes until slightly thickened.

Serve the Dish
Place the seared pork chops on a plate, drizzle with the red curry sauce, and sprinkle with Marcona almonds and chopped cilantro for garnish. Serve immediately.
