Pancake Batter

Brown Sugar Apples

Walnut Cereal Streusel

Method

Pancake Batter

  1. 1

    Prepare the Pancake Batter

In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt. In another bowl, combine the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.

Brown Sugar Apples

  1. 2

    Cook the Brown Sugar Apples

In a medium skillet, melt 1 tablespoon of butter over medium heat. Add the diced Granny Smith apples, brown sugar, and cinnamon. Cook, stirring occasionally, for about 5-7 minutes or until the apples are tender and caramelized. Remove from heat and set aside.

Walnut Cereal Streusel

  1. 3

    Make the Streusel Topping

In a bowl, combine the chopped walnuts, brown sugar, all-purpose flour, softened butter, oats, and salt. Mix until crumbly. Spread the mixture on a baking sheet and bake at 350°F (175°C) for 10-12 minutes or until golden brown. Remove from the oven and let cool.

Granny Smith Whip

  1. 4

    Prepare the Granny Smith Whip

In a mixing bowl, beat the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract while continuing to whip until stiff peaks form. Gently fold in the finely grated Granny Smith apple.

Cooking Pancakes

  1. 5

    Cook the Pancakes

Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown. Repeat with remaining batter.

Assembly

  1. 6

    Assemble the Dish

To serve, stack the pancakes on a plate, top with the brown sugar apples, sprinkle with walnut streusel, and finish with a dollop of Granny Smith whip. Enjoy your delicious Apple Jack Pancakes!
