Method
For the Kuro Wagyu Steak

Prepare the Grill
Soak the almond wood chips in water for at least 30 minutes before grilling.

Season the Steak
Pat the Kuro Wagyu New York strips dry with paper towels. Season both sides generously with salt and black pepper.

For the Allium Jam

Add Garlic and Sugar
Stir in the minced garlic and brown sugar. Cook for an additional 5 minutes, stirring frequently.

Finish the Jam
Add balsamic vinegar and salt. Cook for another 10 minutes until the mixture is thick and jam-like. Remove from heat and set aside.
For the Saba Demi

Combine Ingredients
In a small saucepan, combine the saba and beef stock. Bring to a simmer over medium heat.

Reduce the Sauce
Let the mixture reduce by half, about 10-15 minutes. Stir in butter until melted and smooth. Season with salt and black pepper to taste.
For the Miso Cucumber

Prepare the Cucumber
In a bowl, combine the thinly sliced cucumber, white miso paste, rice vinegar, and sesame oil. Toss to coat well.

Chill
Let the cucumber marinate for at least 15 minutes before serving.
For the Scallion Coulis

Blend the Ingredients
In a blender, combine the chopped scallions, olive oil, lemon juice, and salt. Blend until smooth.

Taste and adjust salt, if necessary. Set aside until ready to serve.
