For the Kuro Wagyu Steak

    Prepare the Grill

    Soak the almond wood chips in water for at least 30 minutes before grilling.

    Season the Steak

    Pat the Kuro Wagyu New York strips dry with paper towels. Season both sides generously with salt and black pepper.

    Grill the Steak

    Preheat the grill to medium-high heat. Add the soaked almond wood chips to the grill. Place the steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from grill and let rest for at least 5 minutes before slicing.

For the Allium Jam

    Sauté the Onions

    In a medium saucepan, heat olive oil over medium heat. Add the finely chopped onions and cook until they are soft and translucent, about 10 minutes.

    Add Garlic and Sugar

    Stir in the minced garlic and brown sugar. Cook for an additional 5 minutes, stirring frequently.

    Finish the Jam

    Add balsamic vinegar and salt. Cook for another 10 minutes until the mixture is thick and jam-like. Remove from heat and set aside.

For the Saba Demi

    Combine Ingredients

    In a small saucepan, combine the saba and beef stock. Bring to a simmer over medium heat.

    Reduce the Sauce

    Let the mixture reduce by half, about 10-15 minutes. Stir in butter until melted and smooth. Season with salt and black pepper to taste.

For the Miso Cucumber

    Prepare the Cucumber

    In a bowl, combine the thinly sliced cucumber, white miso paste, rice vinegar, and sesame oil. Toss to coat well.

    Chill

    Let the cucumber marinate for at least 15 minutes before serving.

For the Scallion Coulis

    Blend the Ingredients

    In a blender, combine the chopped scallions, olive oil, lemon juice, and salt. Blend until smooth.

    Adjust Seasoning

    Taste and adjust salt, if necessary. Set aside until ready to serve.
