Gather Fresh Herbs
Pick fresh mint and cilantro leaves from their stems. Rinse and set aside.
Wrapping the Spring Rolls

Soften Rice Paper
Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds or until it softens. Remove from water and let excess water drip off.

Fill the Wrapper
Lay the softened wrapper on a clean, flat surface. In the center, place a small amount of each vegetable, tofu, and a few herbs.

Roll the Spring Roll
Fold the bottom of the wrapper over the filling, then fold in the sides, and roll it up tightly from the bottom to the top. Repeat with remaining wrappers and filling.
Making the Dipping Sauce

Combine Ingredients
In a small bowl, combine peanut butter, soy sauce, honey (or maple syrup), lime juice, and water. Mix until smooth.

Adjust Consistency
If the sauce is too thick, add a little more water to reach desired consistency.
Serving

Plate the Rolls
Arrange the spring rolls on a serving platter and serve with the dipping sauce on the side.
