    Season the Steak

    Pat the ribeye steak dry with paper towels. Season both sides generously with salt and black pepper. Allow the steak to sit at room temperature for about 30 minutes to 1 hour before cooking.

    Prepare Aromatics

    Peel and crush the garlic cloves slightly to release their flavor, and set aside. Rinse the fresh rosemary sprig and set aside.

Cooking

    Heat the Pan

    Heat a heavy skillet (preferably cast iron) over medium-high heat for about 5 minutes until it’s hot.

    Add Oil

    Add the olive oil to the hot skillet, ensuring it coats the bottom of the pan evenly.

    Sear the Steak

    Carefully place the ribeye steak in the skillet. Sear for about 4-5 minutes without moving it, allowing a crust to form.

    Flip and Add Aromatics

    Using tongs, flip the steak over and add the crushed garlic cloves and rosemary to the skillet. Cook for another 4-5 minutes for medium-rare, adjusting time for desired doneness.

    Baste the Steak

    As the steak cooks, tilt the pan slightly and use a spoon to baste the steak with the hot oil and juices from the pan, enhancing flavor and moisture.

    Rest the Steak

    Once cooked to your liking, remove the steak from the skillet and transfer it to a cutting board. Let it rest for at least 5 minutes to allow the juices to redistribute.
