Method

Cooking the Pasta

    Boil Water

    In a large pot, bring 4-5 quarts of water to a rolling boil. Add a generous pinch of salt.

    Cook the Pasta

    Add the pasta to the boiling water and cook according to the package instructions until al dente, typically 8-10 minutes.

    Drain the Pasta

    Once cooked, drain the pasta in a colander and set aside. Do not rinse.

Cooking the Vegetables

    Sauté the Garlic

    In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

    Add Vegetables

    Add the bell peppers, zucchini, carrot, and broccoli florets to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

    Add Cherry Tomatoes

    Add the cherry tomatoes and continue to sauté for another 2-3 minutes until they start to soften.

Combining Ingredients

    Combine Pasta and Vegetables

    Add the drained pasta to the skillet with the sautéed vegetables. Toss to combine.

    Add Sauce Ingredients

    Pour in the lemon juice, salt, black pepper, and half of the grated Parmesan cheese. Toss everything together until well combined.

    Garnish

    Remove from heat and sprinkle the remaining Parmesan cheese and fresh basil leaves on top. Toss gently before serving.
