Preparing the Marinara Sauce

Sauté Garlic
Add minced garlic cloves to the pan and sauté for about 1-2 minutes until fragrant, being careful not to burn them.

Add Tomatoes and Spices
Pour in the crushed tomatoes, and add oregano, basil, salt, black pepper, red pepper flakes, and sugar.

Simmer the Sauce
Stir well and bring to a simmer. Reduce heat to low and let it cook for 20-25 minutes, stirring occasionally.

Adjust Seasoning
Taste the sauce and adjust seasoning if necessary. Set aside once done.
Preparing the Fried Calamari

Prepare the Ingredients
In a mixing bowl, combine flour, cornstarch, salt, black pepper, and garlic powder. In another bowl, whisk the eggs until well beaten.

Coat the Calamari
Dip each calamari ring into the egg mixture, then dredge in the flour mixture, ensuring each piece is well coated.

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy.

Drain and Serve
Remove the fried calamari with a slotted spoon and drain on paper towels. Serve hot with marinara sauce on the side.
