Prepare the Tortillas
Cut each corn tortilla into 6 wedges to form triangles.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add the tortilla wedges to the hot oil in batches. Fry them for about 2-3 minutes, or until they are golden brown and crispy.

Drain Chips
Using a slotted spoon, remove the chips from the oil and transfer them to a plate lined with paper towels to drain excess oil. Season with salt while still hot.

Mix the Ingredients
In a medium mixing bowl, combine the diced tomatoes, red onion, jalapeño, and chopped cilantro.

Add Seasoning
Stir in the lime juice, salt, and black pepper to the vegetable mixture. Mix well to combine all ingredients.

Let it Rest
Let the salsa sit for at least 15 minutes at room temperature to allow the flavors to meld together before serving.
