Braised Short Ribs
1. Preheat your oven to 300°F (150°C). 2. Season the beef short ribs with salt, black pepper, garlic powder, and onion powder. 3. In a large oven-safe pot, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned. 4. Remove the short ribs and set them aside. In the same pot, add the beer and scrape the bottom to deglaze. 5. Return the short ribs to the pot, cover, and place in the oven. Braise for 3 hours or until tender.
Hand-Cut Fries
1. While the ribs are braising, wash and peel the russet potatoes. Cut them into fries. 2. Soak the cut fries in cold water for at least 30 minutes to remove excess starch. 3. Drain and pat the fries dry. 4. Heat oil in a deep fryer or a large pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt immediately.
Ooh de Lager Beer Cheese
1. In a saucepan over medium heat, combine the beer and cheddar cheese. 2. Stir until the cheese is melted and smooth. If the cheese is too thick, add a little more beer to reach your desired consistency.
Smoked Paprika Mayo
1. In a small bowl, mix mayonnaise with smoked paprika. Adjust seasoning to taste.
Assembly
1. Once the short ribs are done, shred the meat and set aside. 2. To serve, place a generous portion of fries on a plate, top with shredded short ribs, drizzle with beer cheese, and serve with smoked paprika mayo on the side.
