Cheesecake Preparation
Prepare the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake the Crust
Bake the crust in the preheated oven for 10 minutes. Remove from oven and let cool while preparing the filling.
Make the Cheesecake Filling
In a large mixing bowl, beat together cream cheese, granulated sugar, and vanilla bean paste until smooth and creamy. Add sour cream and eggs, mixing until fully incorporated.
Add Apples
Fold in the diced Granny Smith apples into the cheesecake filling.
Bake the Cheesecake
Pour the cheesecake filling over the cooled crust. Bake in the oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
Chill the Cheesecake
Remove from the oven and refrigerate for at least 4 hours or overnight for best results.
Prepare Salted Caramel Drizzle
In a saucepan over medium heat, combine sugar and water and cook until the sugar dissolves. Allow it to boil without stirring until it turns a deep amber color. Remove from heat and carefully stir in heavy cream and salt. Let cool slightly.
Serve
Once the cheesecake is set, drizzle with the salted caramel sauce before serving. Enjoy!
