Steak Preparation

Season the Steak
Pat the ribeye steaks dry with paper towels. Season both sides generously with salt and black pepper.

Sear the Steak
In a large skillet, heat the olive oil over medium-high heat until shimmering. Add the steaks to the skillet and cook for 4-5 minutes without moving them, until a crust forms.

Add Flavor
Turn the steaks over and add the butter, garlic cloves (smashed), and rosemary to the skillet. Cook for another 3-4 minutes, spooning the melted butter over the steaks to baste them.

Rest the Steak
Remove the steaks from the skillet and place them on a cutting board. Let them rest for at least 5 minutes before slicing.

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips for fries. Rinse the cut potatoes in cold water to remove excess starch, then pat them dry with a clean towel.

Heat the Oil
In a deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature.

Fry the Potatoes
Carefully add the cut potatoes in batches to the hot oil. Fry them for about 5-7 minutes or until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

Season the Fries
While the fries are still hot, sprinkle with salt to taste. Toss to ensure even coating.
