Chocolate Mousse

    Melt the Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until completely melted and smooth. Remove from heat and allow to cool slightly.

    Separate the Eggs

    Separate the egg yolks from the egg whites into two separate bowls.

    Whip Egg Yolks and Sugar

    Add the granulated sugar to the egg yolks and whisk until the mixture is pale and thick. Stir in the melted chocolate mixture and vanilla extract until well combined.

    Whip Egg Whites

    Using a clean bowl, whip the egg whites until soft peaks form. Gently fold the whipped egg whites into the chocolate mixture in three batches, being careful not to deflate the mixture.

    Whip the Cream

    In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated.

    Chill the Mousse

    Spoon the mousse into individual serving dishes or cups. Cover and refrigerate for at least 2 hours or until set.

    Prepare the Whipped Cream

    In a clean bowl, combine the heavy cream, powdered sugar, and vanilla extract. Beat with an electric mixer on medium-high speed until soft peaks form.

    Top the Mousse

    Once the mousse has set, remove from the refrigerator and top each serving with a dollop of whipped cream.
