Method
Preparing the Beef Tenderloin
- 1
Season the Beef
Take the beef tenderloin and pat it dry with paper towels. Rub the olive oil all over the beef. Sprinkle the salt and black pepper evenly on all sides of the tenderloin.
- 2
Preheat the Oven
Preheat your oven to 200°C (400°F).
- 3
Sear the Beef
In a large skillet, heat a little olive oil over medium-high heat. Once hot, add the beef tenderloin and sear it for about 3-4 minutes on each side until it’s nicely browned.
- 4
Roast the Beef
Transfer the seared beef tenderloin to a roasting pan and place it in the preheated oven. Roast for about 20-25 minutes for medium-rare, or until the internal temperature reaches 55-60°C (130-140°F).
- 5
Rest the Beef
Once done, remove the beef from the oven and let it rest for 10 minutes before slicing.
Preparing the Seasonal Vegetables
- 6
Prepare the Vegetables
While the beef is resting, prepare the vegetables. Trim the asparagus and cut the carrots and bell peppers into bite-sized pieces. Mince the garlic cloves.
