Preparation of Beef

  1. 1

    Prepare the Beef

Finely chop the beef tenderloin into small cubes using a sharp knife. Ensure that the beef is fresh and has been kept chilled prior to preparation.

Mixing Ingredients

  1. 2

    Combine Ingredients

In a mixing bowl, combine the chopped beef, capers, shallots, Dijon mustard, Worcestershire sauce, olive oil, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Plating the Tartare

  1. 3

    Plate the Beef Tartare

Using a ring mold or a spoon, shape the beef mixture into a neat round on a chilled plate. Make a small indentation in the center of the tartare.

  2. 4

    Add Quail Egg

Carefully crack a quail egg and place the yolk in the indentation of the tartare. Ensure the egg is fresh and clean.

Garnishing
