Marinade Preparation

Prepare the Marinade
In a mixing bowl, combine soy sauce, brown sugar, minced garlic, grated ginger, black pepper, sesame oil, and red chili flakes. Stir well until the sugar is dissolved and all ingredients are fully incorporated.

Marinate the Pork
Add the cubed pork belly to the marinade. Make sure all the pieces are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best flavor.
Grilling

Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent them from burning.

Assemble the Kebabs
Thread the marinated pork belly cubes onto the soaked skewers, leaving a little space between each piece for even cooking.

Preheat the Grill
Preheat your grill to medium-high heat, ensuring the grates are clean and lightly oiled.

Grill the Kebabs
Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the pork is crispy and caramelized on the outside and cooked through. Use a meat thermometer to check that the internal temperature reaches at least 145°F (63°C).

Remove the kebabs from the grill and let them rest for a few minutes. Serve warm with your choice of dipping sauce or side dishes.
