Wash and Cut Potatoes
Thoroughly wash the Russet potatoes under cold running water to remove any dirt. Pat them dry with a kitchen towel. Cut each potato into thin strips, approximately 1/4 inch thick. For uniform cooking, try to keep the size of the strips consistent.

Transfer the cut potato strips to a large bowl filled with cold water. Let them soak for at least 30 minutes. This step helps to remove excess starch and makes the fries crispier.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, pour in the vegetable oil. Heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of potato; if it sizzles, the oil is ready.

Once the potatoes have soaked, drain them and pat them dry with paper towels. Remove as much moisture as possible to prevent splattering when frying.

Carefully add a batch of dried potato strips to the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes, or until they turn golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to absorb excess oil.
