Falafel Preparation

    Soak the chickpeas

    In a large bowl, cover the dried chickpeas with water and let them soak overnight or for at least 8 hours.

    Make the falafel mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, garlic, onion, parsley, cilantro, cumin, coriander, baking powder, salt, and black pepper. Pulse until you achieve a coarse mixture. Do not over-process; it should not turn into a paste.

    Add flour

    Transfer the mixture to a bowl and stir in the flour until well combined. Cover and refrigerate for at least 1 hour to firm up.

    Shape the falafel

    Using your hands, shape the mixture into small balls or patties, about 1.5 inches in diameter.

    Heat the oil

    In a deep pot or a large skillet, heat the vegetable oil over medium heat until hot (about 350°F or 175°C).

    Fry the falafel

    Carefully drop the falafel balls into the hot oil in batches. Fry for 3-4 minutes on each side, or until they are golden brown and crispy. Remove and drain on paper towels.

    Prepare the tahini sauce

    In a small bowl, combine the tahini, minced garlic, lemon juice, water, and salt. Whisk until smooth and creamy. If the sauce is too thick, add more water until desired consistency is reached.
