Preparation of Nut Filling

    Chop Nuts

    In a food processor, pulse the walnuts and almonds until coarsely chopped. Be careful not to over-process into a powder.

    Mix Filling

    In a mixing bowl, combine the chopped nuts with sugar and ground cinnamon. Mix well to ensure even distribution.

Assembling Baklava

    Prepare Baking Dish

    Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with melted unsalted butter.

    Layer Filo Dough

    Unroll the filo dough and cover it with a damp cloth to prevent it from drying out. Place one sheet of filo in the baking dish and brush it with melted butter. Repeat this process, layering and buttering each sheet, until you have about 8 sheets layered.

    Add Nut Filling

    Spread a thin layer of the nut filling mixture evenly over the layered filo dough. Repeat the layering process with another 4 sheets of filo, brushing each with butter, followed by another layer of nuts. Continue this process until all the filling is used, finishing with about 8-10 layers of buttered filo on top.

    Cut Baklava

    Using a sharp knife, cut the baklava into diamond or square shapes, making sure to cut through all the layers to allow for even cooking.

Baking and Syrup Preparation

    Bake Baklava

    Bake the baklava in the preheated oven for about 45-50 minutes, or until golden and crisp on top.

    Make Syrup

    While the baklava is baking, combine water, granulated sugar, honey, and vanilla extract in a saucepan. Bring to a boil and then lower the heat to simmer for about 10 minutes. Remove from heat and allow to cool.

    Pour Syrup

    Once the baklava is done baking, remove it from the oven and immediately pour the cooled syrup evenly over the hot baklava. Allow it to soak for several hours or overnight before serving.
