Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine 1 cup of rinsed sushi rice with 1 1/4 cups of water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender. Remove from heat and let it sit, covered, for another 10 minutes.

Season the Sushi Rice
In a small bowl, mix together 2 tablespoons of rice vinegar and 1 teaspoon of salt until dissolved. Once the rice has rested, transfer it to a large bowl and gently fold in the vinegar mixture. Let the rice cool to room temperature.

Prepare the Tuna
While the rice is cooling, cut the sushi-grade tuna into 1/2-inch cubes. In a medium bowl, combine the cubed tuna with 3 tablespoons of soy sauce, 1 tablespoon of sesame oil, and finely chopped green onions (reserve some for garnish). Gently toss to coat the tuna evenly.

Assemble the Poke Bowl
In a serving bowl, add a generous scoop of seasoned sushi rice. Top it with the marinated tuna, avocado slices, and cucumber. Sprinkle with sesame seeds and remaining chopped green onions. Optionally, cut the seaweed sheets into strips and place them on top or serve on the side.
