Cooking the Herb Chicken

Prepare the Chicken
In a mixing bowl, combine olive oil, dried oregano, dried thyme, garlic powder, salt, and black pepper. Add chicken breasts and coat them evenly in the herb mixture. Let marinate for at least 30 minutes.

Cook the Chicken
Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken breasts for about 6-7 minutes on each side, or until they are fully cooked and juices run clear. Remove from heat and let rest for 5 minutes before slicing.
Preparing the Salad

Assemble the Salad
In a large salad bowl, add mixed greens as the base. Top with sliced herb chicken, crumbled goat cheese, sliced avocado, roasted golden beets, dried cranberries, and chopped walnuts.

Prepare Watermelon Radish
Thinly slice the watermelon radish and arrange the slices on top of the salad.
Making the Citrus Vinaigrette

Combine Vinaigrette Ingredients
In a small bowl, whisk together olive oil, fresh orange juice, fresh lemon juice, honey, salt, and black pepper until well combined.

Dress the Salad
Drizzle the citrus vinaigrette over the assembled salad just before serving. Toss gently to combine.
