Tartine Preparation

    Prepare the Quinoa

    If not already cooked, rinse 1/4 cup of quinoa under cold water, then cook according to package instructions. Let it cool.

    Toast the Sourdough

    Lightly toast the slices of sourdough bread until golden brown.

    Prepare the Tomatoes

    Slice the cherry tomatoes in half, and dice the heirloom tomatoes into small pieces. Chop the sun-dried tomatoes if they are not already chopped.

    Make the Herbed Goat Cheese Spread

    In a small bowl, mix the herbed goat cheese with minced garlic, chopped parsley, and chopped rosemary. Add a pinch of salt and black pepper to taste.

    Assemble the Tartine

    Spread a generous layer of the herbed goat cheese mixture on each slice of toasted sourdough. Top with the three types of tomatoes and sprinkle the toasted quinoa over the top.

    Drizzle with Olive Oil

    Drizzle a little olive oil over the assembled tartine and add more salt and pepper if desired.
