Prepare the Fries
Peel and cut the russet potatoes into thin strips. Rinse them in cold water to remove excess starch, then dry thoroughly with a kitchen towel.

Fry the Potatoes
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden and crispy, about 5-7 minutes per batch. Remove with a slotted spoon and drain on paper towels. Season with salt.

Cook the Steak
Season the hanger steak generously with kosher salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat. When the oil is hot, add the steak and cook for about 4-5 minutes on each side for medium doneness, or until it reaches an internal temperature of 135°F (57°C).

Serve
Serve the sliced steak alongside the fries. Drizzle with bordelaise sauce and schug to taste.
