    In a skillet, heat olive oil over medium heat. Add sliced onions and a pinch of salt, then cook, stirring occasionally, for about 10-15 minutes until they are golden brown and caramelized.

    In a bowl, whisk together the eggs, diced green chilis, ancho chili powder, salt, and pepper. Pour the mixture into the skillet with the caramelized onions and cook, stirring gently, until the eggs are fully cooked and soft.

    In a small bowl, mix mayonnaise with a pinch of ancho chili powder. Adjust seasoning to taste.
