Roast the Chicken
Preheat the oven to 375°F (190°C). Place the whole chicken in a roasting pan, season with salt and pepper, and roast for 1.5 hours or until the internal temperature reaches 165°F (75°C). Remove from oven and let cool.

Strain the Broth
Once the broth has simmered, strain it through a fine-mesh sieve to remove solids. Discard the solids and return the liquid to the pot.

Add Fresh Dill
Chop the fresh dill and add it to the broth. Adjust seasoning to taste.

Prepare Matzo Balls (optional, if desired)
Follow your preferred matzo ball recipe or package instructions to prepare matzo balls, then cook them according to the instructions.

Serve
Ladle the soup into bowls, adding matzo balls if prepared. Garnish with additional dill if desired.
