Prepare the Candied Bacon
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. In a bowl, mix the brown sugar and five spice powder. Dredge each slice of bacon in the mixture and place it on the baking sheet. Bake for 15-20 minutes until crispy and caramelized. Remove and set aside.

Cook the Eggs
In a non-stick skillet over medium heat, crack the eggs and cook until the whites are set but the yolks are still runny (about 3-4 minutes). Season with salt and pepper to taste.

Make the Sriracha Aioli
In a small bowl, mix together the mayonnaise and sriracha until well combined. Adjust the spice level to your liking.

Assemble the Burger
Toast the brioche buns lightly. On the bottom half of each bun, place a slice of cheddar cheese, followed by two slices of candied bacon, a sunny side egg, and a sprinkle of chopped green onions. Drizzle with sriracha aioli, then top with the other half of the bun.
