    Prepare the Bechamel Sauce

    In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute, stirring constantly. Gradually add the milk, whisking until smooth. Cook until the sauce thickens, then season with salt and black pepper.

    Assemble the Croque Madame

    Preheat the oven to 400°F (200°C). Roll out the puff pastry on a floured surface and cut it into rectangles. Place a slice of black forest ham on each rectangle, add a generous spoonful of bechamel sauce, and sprinkle grated Gruyère cheese on top.

    Add the Egg

    Make a small well in the center of the cheese and crack an egg into each pastry. Season with salt and pepper.

    Bake

    Place the assembled pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes or until the pastry is golden brown and the egg is set to your liking.

    Garnish and Serve

    Remove from the oven, sprinkle with chopped parsley, and serve warm.
