    Prepare the Flatbread Dough

    In a large bowl, combine warm water and yeast. Let it sit for 5 minutes until frothy. Add flour, olive oil, and salt. Mix until a dough forms.

    Knead and Rise

    Knead the dough on a floured surface for about 5 minutes until smooth. Place it in a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour or until doubled in size.

    Preheat Oven

    Preheat your oven to 475°F (245°C) and place a baking stone or baking sheet inside to heat up.

    Shape the Flatbread

    Once risen, punch down the dough and roll it out on a floured surface to your desired thickness. Transfer to a piece of parchment paper.

    Add Cheese and Pepper

    Sprinkle the grated Parmesan, Pecorino Romano, shredded Mozzarella, and cracked black pepper evenly over the flatbread.

    Bake

    Carefully slide the flatbread (with parchment) onto the preheated baking stone or sheet. Bake for 10-12 minutes, or until the cheese is bubbly and the edges are golden.

    Remove from the oven, let it cool slightly, slice, and serve warm.
