    Prepare the Quinoa

    Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and set aside.

    Make the Kofta Mixture

    In a large bowl, combine ground beef, chopped onion, minced garlic, parsley, cumin, coriander, cinnamon, salt, and black pepper. Mix well until all ingredients are fully incorporated.

    Form the Kofta

    Shape the meat mixture into elongated meatballs or patties, about 2-3 inches long. Set aside on a plate.

    Cook the Kofta

    In a large skillet, heat olive oil over medium heat. Add the kofta and cook for about 5-7 minutes on each side until browned and cooked through. Remove from skillet and set aside.

    Prepare the Sauce

    In the same skillet, add the stewed tomatoes and bring to a simmer. Stir in schug sauce and allow to cook for 5 minutes. Return the kofta to the skillet and simmer for an additional 5 minutes.

    Make the Turmeric Tahini

    In a small bowl, mix tahini with turmeric and a little water to achieve a drizzle-able consistency. Season with salt to taste.

    Serve

    Serve the kofta over toasted quinoa, drizzled with turmeric tahini. Enjoy!
