Prepare the Roasted Garlic
Preheat your oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and drizzle with olive oil. Roast in the oven for about 30-35 minutes, until soft and golden. Allow to cool before squeezing out the cloves.

Assemble the Salad
In a large bowl, combine the fresh spinach, roasted garlic (squeezed out of the skins), pickled beets (sliced), and roasted pepitas. Toss gently to combine.

Serve with Goat Cheese
On a serving platter, place the herbed goat cheese in the center and surround it with the spinach and beet mixture. Drizzle with olive oil and season with salt and pepper to taste.

Focaccia Preparation
Slice the focaccia bread into individual pieces and serve on the side for dipping into the herbed goat cheese.
