    Peel the potatoes and slice them thinly (about 1/8-inch thick).

    Sauté the Onion

    Peel and slice the onion thinly. In a large skillet, heat half of the olive oil over medium heat, then add the onion. Cook until soft and translucent, about 5 minutes.

    Cook the Potatoes

    Add the sliced potatoes to the skillet with the onions. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender and lightly golden. Season with salt and black pepper.

    In a large bowl, crack the eggs and whisk them together until well combined. Season with a little salt and pepper.
