    Prepare the Potatoes and Onion

    Peel the potatoes and slice them thinly (about 1/8 inch thick). Slice the onion thinly as well.

    Cook the Potatoes and Onion

    In a large non-stick frying pan, heat 1/2 cup of olive oil over medium heat. Add the sliced potatoes and onions, season with salt and pepper, and cook gently for about 15-20 minutes, until the potatoes are tender but not browned. Stir occasionally to ensure even cooking.

Cooking the Tortilla

    Prepare the Eggs

    In a large bowl, crack the eggs and whisk them together until well combined. Add salt and pepper to taste.

    Combine Ingredients

    Once the potatoes and onions are cooked, drain them from the oil and add them to the bowl with the whisked eggs. If using chorizo, cook it in the same pan for about 5 minutes until slightly crispy, then add it to the egg mixture.

    Cook the Tortilla

    In the same frying pan, add a little more olive oil if needed. Pour the potato, onion, and egg mixture into the pan and cook over medium-low heat for about 5-7 minutes, until the edges start to set.

    Flip the Tortilla

    To flip the tortilla, use a large plate. Invert the tortilla onto the plate, then slide it back into the pan to cook the other side for another 5 minutes, or until fully set and golden brown.

    Serve

    Once cooked, slide the tortilla onto a serving plate. Allow to cool slightly before cutting into wedges. Serve warm or at room temperature.
