Cheese Preparation
Orange Brandy Reduction
Method
Cheese Preparation
- 1
Prepare the Cheese
Slice the goat cheese into thick rounds, about 1 cm each. This will help to ensure that they hold their shape while cooking.
- 2
- 3
Dredge the Cheese
Take a slice of goat cheese and first coat it in the flour mixture, shaking off any excess. Then dip it in the beaten egg, allowing any excess to drip off, and finally coat it in the breadcrumbs. Repeat for each slice.
- 4
Pan-Fry the Cheese
In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded goat cheese slices and cook until golden brown, about 3-4 minutes on each side. Remove and let drain on a paper towel.
Orange Brandy Reduction
- 5
Combine Ingredients
In a small saucepan, combine the orange juice, orange zest, brandy, and honey.
- 6
Cook the Sauce
Bring the mixture to a simmer over medium heat and allow it to reduce by half, about 10-15 minutes. Stir occasionally to prevent burning.
- 7
Finish with Butter
Once the sauce has thickened, remove it from heat and whisk in the butter until melted and incorporated.
Assembly
- 8
Plate the Dish
Arrange the pan-fried goat cheese slices on a plate and drizzle the orange brandy reduction over the top. Serve immediately.
