Prepare the Cheese
Cut the queso blanco into cubes about 1 inch in size. Set aside.

Prepare the Breading Mixture
In a shallow bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Mix well.

Bread the Cheese
Dip each cheese cube into the flour mixture, then into the egg mixture, and finally back into the flour mixture, ensuring they are well coated.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot (around 350°F or 175°C).

Fry the Cheese
Carefully place the breaded cheese cubes in the hot oil, frying them in batches to avoid overcrowding. Fry until golden brown and crispy, about 2-3 minutes per side.

Drain and Serve
Using a slotted spoon, remove the fried cheese from the oil and drain on paper towels. Serve hot.
For the Guava Sauce

Combine Ingredients
In a small saucepan, combine guava paste and water. Cook over medium heat, stirring frequently until the guava paste has dissolved.

Add Lime Juice and Chili Powder
Stir in the lime juice and chili powder. Continue to cook for another 2-3 minutes, until the sauce thickens slightly.

Serve
Remove from heat and let cool slightly. Serve the guava sauce alongside the fried cheese.
