Fish Preparation

    Clean the Fish

    Rinse the whole fish under cold water and pat it dry with paper towels. Make 2-3 diagonal slashes on both sides of the fish to help it cook evenly.

    Season the Fish

    Rub the fish inside and out with salt, black pepper, and garlic powder. Let it marinate for about 15 minutes.

    Fry the Fish

    In a large frying pan, heat vegetable oil over medium-high heat. Once hot, carefully add the fish to the pan. Fry for about 5-7 minutes per side, or until the skin is crispy and the fish is cooked through. Remove and drain on paper towels.

Salad Preparation

    Prepare the Salad Ingredients

    In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.

    Dress the Salad

    In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

Tostones Preparation

    Prepare the Plantains

    Peel the green plantains and cut them into 1-inch thick slices.

    Fry the Plantains

    In a separate pan, heat vegetable oil over medium heat. Fry the plantain slices for about 3-4 minutes on each side until golden, then remove and drain on paper towels.

    Smash the Plantains

    Using the bottom of a glass or a tostonera, flatten each fried plantain slice to about half an inch thick. Return them to the hot oil and fry again for 2-3 minutes until crispy. Remove and season with salt.
