Marinade Preparation

    Prepare the Marinade

    In a food processor, combine the garlic cloves, olive oil, fresh oregano, cumin, salt, black pepper, lime juice, and orange juice. Blend until smooth.

    Marinate the Pork

    Using a sharp knife, make deep cuts (about 1 inch apart) all over the pork shoulder. Rub the marinade all over the pork, ensuring it gets into the cuts and on all sides. Place the pork in a large resealable plastic bag or a dish, cover, and refrigerate for at least 12 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 300°F (150°C).

    Roast the Pork

    Remove the marinated pork shoulder from the refrigerator and place it in a roasting pan. Cover the pan tightly with aluminum foil. Roast in the preheated oven for about 4-5 hours, or until the pork is fork-tender.

    Crisp the Skin

    After the pork is tender, increase the oven temperature to 400°F (200°C). Remove the foil and roast for an additional 30-45 minutes, or until the skin is crispy and golden brown.

    Rest and Serve

    Once done, remove the pork from the oven and let it rest for about 20 minutes before slicing. Serve with your choice of side dishes.
