Marinade Preparation

    Prepare the Marinade

    In a bowl, combine olive oil, red wine vinegar, minced garlic, oregano, salt, and black pepper. Mix well until all ingredients are blended.

    Marinate the Meats

    Place the flank steak, pork loin, chicken breast, and chorizos in a large resealable bag or a shallow dish. Pour the marinade over the meats, ensuring they are well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

Seared Potatoes Preparation

    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into even-sized cubes (about 1-inch).

    Season the Potatoes

    In a large bowl, toss the cubed potatoes with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.

    Sear the Potatoes

    Heat a skillet over medium-high heat. Add the seasoned potatoes and cook for about 15-20 minutes, stirring occasionally, until they are golden brown and crispy. Remove from heat and set aside.

Grilling the Meats

    Preheat your grill to medium-high heat. Make sure the grill grates are clean and lightly oiled.

    Remove the meats from the marinade and let the excess drip off. Grill the flank steak for about 5-7 minutes on each side for medium rare, pork loin for about 6-8 minutes on each side until cooked through, chicken breasts for about 6-8 minutes on each side until fully cooked, and chorizos for about 4-5 minutes, turning occasionally, until browned.

    Once grilled, remove the meats from the grill and let them rest for about 5 minutes before slicing. This helps retain their juices.

Serving

    Plate the Parrillada

    On a large serving platter, arrange the grilled meats alongside the seared potatoes. Garnish with fresh herbs if desired.
