    Prepare the Ingredients

    Chop the onion, bell pepper, and garlic. Rinse and clean the shrimp and mussels. Cut the chicken thighs into bite-sized pieces.

    Soak Saffron

    In a small bowl, soak the saffron threads in a couple of tablespoons of warm water for about 10 minutes to release their flavor and color.

    Heat the Oil

    In a large paella pan or a wide skillet, heat the olive oil over medium heat.

    Cook the Chicken

    Add the chicken pieces to the pan and cook until browned on all sides, about 5-7 minutes.

    Add Vegetables

    Stir in the chopped onion, garlic, and bell pepper, cooking until the vegetables are softened, about 3-4 minutes.

    Incorporate the Rice

    Add the bomba rice to the pan, stirring well to coat the grains in the oil and mix with the vegetables.

    Add Broth and Seasoning

    Pour in the chicken broth and add the soaked saffron (with its water), paprika, salt, and black pepper. Stir to combine.

    Simmer the Paella

    Bring the mixture to a gentle simmer. Cook uncovered for about 10-15 minutes, without stirring, until most of the liquid is absorbed.

    Add Seafood and Peas

    Carefully arrange the shrimp and mussels on top of the rice, and sprinkle the green peas. Cover the pan with a lid or foil and cook for an additional 5-7 minutes, until the seafood is cooked and the mussels are open.

    Rest the Paella

    Remove the pan from heat and let it sit, covered, for about 5 minutes to allow the flavors to meld.
