    Prepare the Saffron

    In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their color and flavor.

    Prepare the Meat

    Season the chicken thighs, pork shoulder, and chorizo with salt and pepper.

    Chop the Vegetables

    Dice the onion, red and green bell peppers, and mince the garlic.

Cooking

    Brown the Meat

    In a large paella pan or a wide, shallow skillet, heat olive oil over medium-high heat. Add the chicken thighs and pork shoulder, and cook until browned on all sides, about 8-10 minutes.

    Add Chorizo and Vegetables

    Add the sliced chorizo, onion, bell peppers, and garlic to the pan. Cook for an additional 5-7 minutes until the vegetables are soft.

    Add Rice and Spices

    Stir in the rice, smoked paprika, and the soaked saffron (including the water). Mix well to combine all ingredients.

    Add Chicken Broth

    Pour the chicken broth into the pan, stirring to combine. Bring to a simmer.

    Cook the Paella

    Reduce the heat to medium-low, and let the paella cook without stirring for about 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.

    Rest and Garnish

    Once cooked, remove the pan from heat and let it rest for about 5 minutes. Garnish with chopped parsley and lemon wedges before serving.
