    Prepare the Plantains

    Peel the green plantains and cut them into 1-inch pieces.

    Fry the Plantains

    In a deep skillet, heat enough oil to cover the plantains. Fry the pieces until golden on all sides, about 5-7 minutes. Remove and drain on paper towels.

    Make the Garlic Mixture

    In a mortar and pestle (or a bowl), mash the garlic cloves with salt until a paste forms.

    Combine Ingredients

    In a large bowl, combine the fried plantains, pork cracklings, garlic mixture, and chicken broth. Mash together until a chunky consistency is achieved.

    Shape the Mofongo

    Using your hands, shape the mixture into a mound or ball. Set aside.

    Marinate the Steak

    In a bowl, mix olive oil, garlic powder, cumin, paprika, salt, black pepper, and lime juice. Rub this mixture over the flank steak, ensuring it is well coated. Let it marinate for at least 30 minutes (or up to overnight in the refrigerator for more flavor).

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Steak

    Place the marinated flank steak on the grill. Cook for about 5-7 minutes on each side for medium-rare, or until it reaches your desired doneness.

    Remove the steak from the grill and let it rest for 5 minutes before slicing.
