Fry the Plantains
Peel the green plantains and cut them into thick slices. Heat olive oil in a frying pan over medium heat. Fry the plantain slices until they are golden brown on all sides. Remove and drain on paper towels.

Mash the Plantains
In a mortar and pestle or a mixing bowl, add the fried plantains, garlic cloves, and salt. Mash them together while gradually adding chicken broth until you achieve a smooth yet chunky consistency. Set aside.

Cook the Shrimp
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add the shrimp and cook until pink and opaque, about 3-4 minutes.

Make the Sauce
Stir in red pepper flakes and season with salt and black pepper. Add the tomato sauce and bring to a simmer. Cook for an additional 2-3 minutes, allowing the flavors to meld together.

Finish the Dish
Remove from heat and stir in chopped parsley. Serve the shrimp over the prepared mofongo.
