Preparation of Mofongo

Prepare the Garlic
In a mortar and pestle (or food processor), crush the garlic cloves with a pinch of salt until it forms a paste.

Mash the Plantains
In the same skillet, add the fried plantains and mash them with the garlic paste. Gradually add chicken broth until you achieve a smooth, dough-like consistency. Season with salt and black pepper to taste.

Shape the Mofongo
Mold the mashed plantains into a bowl shape or individual servings using a small bowl or cup. Set aside.
Preparation of Fried Pork Chunks

Prepare the Pork
Cut the pork shoulder into bite-sized chunks. Season them with salt, black pepper, and lemon juice. Let it marinate for at least 30 minutes.

Fry the Pork
In a large skillet, heat the remaining 1/2 cup of olive oil over medium-high heat. Add the marinated pork chunks and fry until golden brown and cooked through, about 10-12 minutes. Ensure they are crispy on the outside.

Place the molded mofongo on serving plates. Top with the crispy fried pork chunks. Garnish with chopped fresh cilantro and serve with lime wedges on the side.
