Method

Preparation of Mofongo

  1. 1

    Fry the Plantains

Peel the green plantains and cut them into 1-inch thick slices. Heat 1/2 cup of olive oil in a heavy skillet over medium heat. Fry the plantain slices until they are golden brown on both sides, about 4-5 minutes per side. Remove them from the skillet and drain on paper towels.

  2. 2

    Prepare the Garlic

In a mortar and pestle (or food processor), crush the garlic cloves with a pinch of salt until it forms a paste.

  3. 3

    Mash the Plantains

In the same skillet, add the fried plantains and mash them with the garlic paste. Gradually add chicken broth until you achieve a smooth, dough-like consistency. Season with salt and black pepper to taste.

  4. 4

    Shape the Mofongo

Mold the mashed plantains into a bowl shape or individual servings using a small bowl or cup. Set aside.

Preparation of Fried Pork Chunks

  1. 5

    Prepare the Pork

Cut the pork shoulder into bite-sized chunks. Season them with salt, black pepper, and lemon juice. Let it marinate for at least 30 minutes.

  2. 6

    Fry the Pork

In a large skillet, heat the remaining 1/2 cup of olive oil over medium-high heat. Add the marinated pork chunks and fry until golden brown and cooked through, about 10-12 minutes. Ensure they are crispy on the outside.

Serving

  1. 7

    Plate the Dish

Place the molded mofongo on serving plates. Top with the crispy fried pork chunks. Garnish with chopped fresh cilantro and serve with lime wedges on the side.
