    Peel and Cut Plantains

    Peel the green plantains by cutting off the ends and slicing the skin lengthwise. Cut the plantains into 1-inch thick slices.

    Fry Plantains

    In a large skillet, heat the olive oil over medium heat. Add the plantain slices and fry them until they are golden and tender, about 8-10 minutes. Remove from the skillet and drain on paper towels.

    Prepare Garlic

    In the same skillet, add the garlic cloves and sauté for 1-2 minutes until fragrant. Remove from heat.

    Mash Plantains

    In a large mixing bowl, combine the fried plantains, sautéed garlic, pork cracklings, chicken broth, salt, and black pepper. Use a mortar and pestle or a sturdy fork to mash the mixture until well combined but still slightly chunky.

    Shape Mofongo

    Using your hands, shape the mashed plantain mixture into small bowls or mounds on a plate.

    Add Toppings

    If using, sauté the shrimp in a little olive oil until pink and cooked through. Place them on top of the mofongo. Garnish with chopped cilantro and serve with lime wedges on the side.
