    Peel the ripe plantains by cutting off both ends and making a shallow slit along the length of the plantain skin. Remove the skin carefully to avoid breaking the fruit inside.

    Slice the peeled plantains diagonally into about 1-inch thick slices. This will help them fry evenly and develop a nice texture.

Cooking

    In a large frying pan, heat the vegetable oil over medium heat. You can test if the oil is hot enough by dropping in a small piece of plantain; if it sizzles, the oil is ready.

    Carefully add the sliced plantains to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on one side until they are golden brown.

    Using a slotted spoon, flip the plantains over and fry the other side for an additional 2-3 minutes, until they are also golden brown and crispy.

    Once cooked, remove the fried plantains from the pan and place them on a paper towel-lined plate to absorb excess oil.

    Sprinkle the fried plantains with salt while they are still hot, allowing the salt to adhere better.
